Award-winning Jalapeno SPAM-ER's

Jacob Lowry, winner of the Great American SPAM Championship Kid Chef competition at the New Mexico State Fair, shares his winning recipe for Jalapeno SPAM-ER's.

 

Jalapeno SPAM-ER’s
24 fresh jalapeno peppers (about 2 pounds)
1 (8 ounce) package cream cheese, softened
1 (8 ounce) package shredded cheddar cheese
1-1/2 cans SPAM with Bacon, chopped
40 crackers, finely crushed (about 1-2/3 cups)
2 cups oil

Cut peppers lengthwise in half; scrape out seeds and veins.

Sauté in olive oil.

Combine next 3 ingredients; spoon into peppers.

Cover peppers with a sprinkling of cracker crumbs till evenly coated (extra on top). Place in single layer in a shallow pan. Refrigerate for 15 minutes.

Bake at 350 degrees F for 20 to 25 minutes or until golden brown.

Serve hot with ranch dressing.
