SPAMALICIOUS Coconut Curry Rice Balls

Caroline Barela Burgess shows off her SPAMALICIOUS Coconut Curry Rice Balls that one first prize in the Great American SPAM Championships at the New Mexico State Fair.

 

SPAMALICIOUS Coconut Curry Rice Balls
1/2 cup glutinous or sticky rice
1/2 can unsweetened coconut milk
1/4 cup water
1-1/2 tablespoons green curry paste
1 (12 ounce) can SPAM Less Sodium, grated
2 tablespoons cilantro, minced
1 egg white, beaten
1/2 cup flaked coconut
1/2 cup panko bread crumbs
Sweet chili sauce

Rinse rice in several changes of water until no longer cloudy. Add coconut milk, water and curry paste to a small pot, add rice and bring to a boil. Cover, reduce heat to lowest setting and allow to steam for 20 minutes. While rice is cooking, grate SPAM and fry until lightly browned. When rice is ready, fluff with a fork and add browned SPAM. Cool for 10 to 15 minutes. Mix in minced cilantro. Form rice mixture into small balls. Dip in beaten egg whites, then coat with coconut and bread crumbs. Brown in 375 degree F oven until golden brown, about 8 to 10 minutes. Serve with a side of sweet chili sauce.

Yields: approximately 18 balls.
