It's said to be one of the hot new food trends in the culinary world - and you can find it right here in Albuquerque.
This week Best Bites is checking out Peruvian cuisine at Taste of Peru. Chef Willy Mantilla, a native of Peru, grew up in the restaurant business and now he's making his mark on the Duke City.
"I just wanted everyone to get a taste of what we're all about," says Mantilla. That's how Taste of Peru at Juan Tabo and Lomas came to life.
Mantilla’s been using 100-year-old family recipes for items like Lomo Saltado, which is a Peruvian beef stir fry, and Papa a La Huancain, which are potatoes with a yellow chile cream sauce.
The specialty dish at taste of Peru is the chicken rotisserie.
"This is basically what we're all about. We're a Peruvian rotisserie. The Peruvian rotisserie has been for hundreds of years. It was invented, believe it or not by a German guy, in Lima," says Mantilla.
Throw in an appeteizer of empanadas, purple corn pudding for dessert, and wash it down with some Inca Kola and you've got yourself a traditional Peruvian meal.
