This week's Best Bites is way out there - but worth the trek

When you hear about a restaurant called Timbuctu, you almost immediately know it's going to be way out there, off the beaten path.

While that's true about this week's Best Bites location, once you get one taste of the food, you'll know it's worth the drive.

Located in the Mariposa community in northwest Rio Rancho, Timbuctu has an amazing view and promises a fine dining experience that is worth the trek.

Chef Jason Horbachefsky has been in the kitchen for about 15 years. He specializes in classic French and Asian cooking styles.

At Timbuctu, he's incorporating his style with a Southwest flair. He says cooking at a small, neighborhood restaurant allows him to be more in touch with what he cooks.

"I think its actually quite intimate. It allows me to be more hands on and be more creative to try and bring some new cuisine here," says Chef Horbachefsky.

During our visit, he starts the meal off with green chile crab cakes using only lump crab meat. He tops it with a red chile Hollandaise sauce.

Timbuctu may be in the middle of the desert, but the crab cakes rival New England's. 

The main course is a pan-seared veal chop with a champagne beurre blanc. On the side, fresh asparagus and a parmesan and green chile risotto.

You can bet your server will help you pick out a wine pairing to go with your meal, because that's part of Timbuctu's goal.

"Provide a nice place for folks to get together, have a nice time, have great food, great wine, great local beer and enjoy themselves for a good value," says manager Jason Stein.
