Using more leftovers while staying healthy

ALBUQUERQUE, N.M. -- Recent research from the U.S. Department of Agriculture shows around one-third of food across the nation gets wasted, and a new study from the National Resources Defense Council claims just a third of that waste could feed millions of people.

More families could be saving more food, but it’s important to do it safely.

"You should really own a food thermometer, which I know a lot of people don't. But when you reheat leftovers, they should be 165 degrees," said Renee Conklin, a nutrition educator for the Chile Plus program at the Prevention Research Program at UNM. "I know a lot of people love cold pizza but if you follow food safety guidelines you shouldn’t be eating food cold."

Conklin said bruises on fruit are fine; just cut off what doesn’t look appealing. Cut an inch around mold on cheese, but throw away bread with any mold on it. Use meat within two days if it's refrigerated; otherwise, freeze it.

Also, pay attention to the temperatures of cooked foods.

"Especially if it's hot out, you want to do it within an hour," Conklin said. "If it's 90 degrees and you're barbecuing outside, get it in the refrigerator within an hour. Otherwise, if it’s on the counter, within two. Chilling is what you want to think about first."
