Local fitness expert: Finding sweet success with your nutrition plan
ALBUQUERQUE, N.M. — We’re entering a busy time in New Mexico with the state fair, Balloon Fiesta, football games – plus all the pumpkin spice treats.
That’s why Kimberly Samborski, of SWEAT Bootcamp in Rio Rancho, stopped by to give some tips on how to stick with your nutrition plan. She also showed us a healthy and delicious pumpkin cupcake recipe:
- 1/2 cup of Pure Pumpkin
- 92 grams of liquid egg whites
- 2 teaspoons of Vanilla Extract
- 1/4 cup of Sugar-Free Maple Syrup
- 75 grams of Kodiak PUMPKIN Power Cake Mix
- 1 teaspoon Baking Powder
- Sweetener to taste
